Ovines is the Colonial term for cattle.

Ovines are raised by Oviners, typically on agro settlements ^{(TOS: "The Lost Warrior")}.

According to Encyclopedia Galactica (a non-canonical piece of merchandise published in 1979):

Ovines are four-legged grazing animals raised by the humans of Sectar for food. Their meat is the planet's major export. Thousands of Ovine carcasses are loaded into the hold of a small freighter several times each year. They are flash-frozen by exposure to the chill of space to preserve them on the long journey to the Colonies. ^[1]

Notes

Ovine is another term for domestic sheep.
